Exhaust turbine affects ????
I'm pretty sure the compressor size affects the spool up and top end, but how exactly does the exhaust side's size matter? Thanks I know its a newb question I've just been wondering for a while....

You can't make generalizations like that.  A turbocharger is a complex mechanical device that needs to be custom tailored for each specific application.  You can't just slap parts together and slap it on the engine and expect it to work.
As a rule, compressor size give you potential peak power.  Turbine wheel and housing A/R dictate power band (moreso the A/R).  Turbine wheel trims dictate the "efficiency" of the turbo, and has a little to do with "lag" due to turbine wheel mass.
You might want to read Hugh MacInnes' "Turbocharging" (a bit dated) and/or Corky Bell's "Maximum Boost" books for esoteric information on turbos and their terms.
