A lot of people like EGT (exhaust gas temp). It works like an A/F but more exact if thats way I remember it.

no autometer unless its there top of the line, the rest is generally crap.
Defi is great but not on the "nicer looking" end of gauges. Actually I like them, uhm I think people say greddys are good too.

I would go first with a temp guage than boost and oil temp. I have a digital water temp a SPI boost guage and I am in the prosses of installing a digital oil temp guage.I love the way the digital guages show rapid temp changes instantly better than looking at a slow moving need.

So Egt and Boost is a must, then (as i have 3 holes) oil temp as there is not one on the std Clocks.

Does this sound right?

Lightbulb

You can replace the original water temperature with another one, and have still an hole.
The only problem with the water temperature is that is without scale, just hot and cold, so you don't know the difference between 110c° and 80C°.
I heard some guy in this forum (i don't remember how) that was thinking to replace just the face with a scale and not to change the meter, but at my opinion is better buy a new one.
Bye Bye
