Engine Operating Parameters

I have been working on an application that runs on a PC that resides in a car in particular a 3rd gen. My question here is I want to set low and high limits for certain engine parameters. One of the parameters is the water temp. What I need to know is what would be considered the minimum temperature you would want to see before you start running in higher RPMs. My display would indicate the temperature value in blue for low temp and of course red with an alarm if the high temperature is exceeded. Any help with this will be greatly appreciated. I will have more questions as I start to finish my application. Personally I would use 200F or maybe 210F as a coolant temp upper limit but in all reality oil temp is what you really want to know...

Engine Water Temp min value

Thanks for the information so I will set the lowe4 limit to 165F, my indication will be BLUE until it reaches > 165F then it will be the normal color then if > 220F I will show the value in RED and sound a high coolant alarm. The oil temp would be good I need to look
at the PFC data and see if the OIL temp comes back I know fuel temp does.
