What do most people consider the most cost effective & and best swaps in
V8's. I know that ford carb engines are cheaper (right?) but most people agree the LS1 swap are probably the best V8 (again, right?)

LS1's are probably used more often lately because they are light, have huge aftermarket support, are easy to find, easy to modify and respond great to mods.
you can get an ls1 and t56 for $4k depending on mileage. and if you are smart, you can buy a totalled F-body for about $5k, sell off all the extras, and be into an ls1 and t56 for free or way cheap.

I put an "old" 350 (actually a 383ci) in mine just cause I had one in my garage, so I couldn't quite justify spending 4k to get an LS1 right off the bat... but for what it's worth now, I wish I had done it to begine with... Unless you're a die hard old school person, or you're just going to race the car, you can not compare a carb to FI, no if's and's or but's. Some "pro's" might be able to tune in a carb to be VERY close to an FI set up, but change the weather 30 degrees or something and you're almost back to square one with the carb.
And like you've probably read already, the LS motors are lighter (all aluminum) and take VERY well to bolt-on upgreades! And the best part (in my opinion) you don't have to have a carb sticking out of your hood screaming, "Look everyone, I obviously don't have a little 130hp rotory motor in here anymore, still want to race?"
