Yes sir. A die grinder will work just fine.
Be careful not to leave any area to thin after porting. The area will already be weak from the heat from welding. Try to leave it at least 1/8 thick to reduce the chance of cracks forming.

This is the exact thread I've been wanting to come across. I just picked up a REPU and was considering going a similar route as you. I also see that you are somewhere close to me. I would love to check this truck out in person if possible. I've got mine in Kent at the moment at Good box motorsports.

Just last week I figured out a good carb for it, test driving it in the brown car. That's all I've had time for. But I am thinking about going with an aftermarket turbo because the S5 I was wanting to run just isn't going to fit very well with the wastegate housing and rod the way they are. Kinda in the way of the heater core tube.
Maybe if I got an OBX manifold from eBay and mod it to fit the narrow engine bay... T4 footprint, 46mm wastegate and all that.
