temp sensor question

I finally got my baby running! YES! But, my temp gauge doesn't work, I have the 12a fmoc rad, no emissions, weber 45, w/5speed. What I need to know is, can I remove either the sensor in the water pump housing, or the one at the bottom of the rad, and replace it w/the single wire type for my temp gauge? Or do I need all 3 still? I'm dying to drive my baby, but not going to if I can't tell how hot she's getting. I'd rather wait than damage something. I know I can install an aftermarket gauge, but would rather not right now unless it's the only option.
