1. for the metering oil pump, you will likely have to get creative. i never had an IDA carbie, but i did have a Dell'Orto DHLA from RB and i had to make my own actuating rod for the MOP. at the time (circa 1993) i used a coat hanger. if given the same situation today, i would get better material to make a rod, but on the same hand, it worked, so ....
deleting it is an option, but it's probably better if you just find a way to keep it functional. you could always opt to lock it in place, fully open.
actually, i just did a quick search, and it's going to matter if your throttle is "top-pull" or "bottom-pull" as to how easy it will be to sort out.

2. for the fuel lines, my guess is you'll be forced to dead-head it (delete the return line). i had to do that with my Dell'Orto. i ran it that way until i started tuning it, then i put a return-style regulator in the system, so i started using the return line again. having done it both ways, i would recommend the latter.
3. for your transmission question, i can give you these links:
the FSM = Foxed.ca
an IDA schematic = https://www.carburetion.com/diags/48IDAdiaginfo.asp
i never had an automatic, so i'm unable to help you past that. sorry.
