I have a lil extra money to spend on my 86 NA S4.

Should I replace the hoses or get rid of the ones I can. Why or Why NOT?
The car is daily driven and stock w/ the exception of premium wires and plugs.

 

Are the vac lines old and in need of replacing? If so, then go ahead. It shouldn't cost you more than ~$30 to buy enough hose to redo the engine bay.

There's no performance gain from removing emissions equipment and the hoses associated with them, so the only reason to get rid if them is to clean up the engine bay. If that's your goal, then do some searches for "emissions removal" to find out how to do it properly. Obviously, if your area does smog checks, you'll need to keep them.

 

don't know much about those cars but if you have a nest of lines like the 3rd gen, it would just bug me not to take it out and minimize the lines.
