Thermostat can be a possibility. What about the fan setup? Is it the stock clutch fan, or an aftermarket e-fan? I've seen plenty of people install weak e-fans that can't pull enough air to keep temps in line. Does the temperature even out around 1/4 - 1/3 at highway speeds?

Yes, it has a waterpump, but if it's not making noise or leaking, it's probably fine.
Generally speaking there isn't anything different about the cooling system of a rotary over any other car.
In addition to the T-stat, check the faces of the radiator and condensor (if you have A/C) and make sure they're clean of debris. Make sure all the ducting in place. And I second checking the ratio of coolant to water.

You also might want to consider a decent aftermarket gauge.

okay no a/c um running a lil over 50/50 more like 75/50 due to winter coming on no leaking or noise from the waterpump um stock clutch but its good nothing as far as debre but i have a aftermarket cluster so idk if it is really running a lil over half or if its running normal cuz my speedo is off rpms r a lil off and my oil psi is a lil off its running around 60 to 70 but my gauge is running 80 but my sunco one says 60 to 70 depends on idle or rpms on the high way was a turbod car then dip stick before me took it all off and idk if that would affect the temp????

I'm in the mid-west as well. In fact north of you and IMO your ratio of coolant to water is overkill. Generally speaking, the more water the cooler you will run. 50/50 at most.

Also, in the future, complete sentences, with decent spelling, grammer and punctuation is a plus. We're not texting on the phone. If/when you move out of this section, alot of really knowledgable owners may not bother to decipher your posts and simply pass them up.

Examine everything related to your cooling system....hoses, ducts, fans etc. It's unusual, but I have seen hoses collapse internally. Oil also plays an important role in cooling rotary engines, so examine your cooler(s) too. Thermostats aren't THAT expensive or difficult to change.

Off-hand I can't think of how removing a turbo system would effect cooling, but your talking major modifications. Who knows what the previous owner may have done.
