Holley 600 Carb Specs - HELP!

Hi

I am wondering if anyone can help, I am from New Zealand and most people here run IDA's as there preferred carb. I have chosen to go for something different which is a Holley 600 double pumper with mechanical secondary's. I have heard more good than bad about the Holley 600, so I am willing to take a risk and go ahead with it, even though its not a popular carb over here and not many people are experienced with the carb over here.

Engine:12A Motor with 13B Plates - Monster Bridgeport.
Inlet Manifold: Custom Inlet manifold to suit the Holley 600 and the motor.
Carb: Holley 600 Double Pumper with mechanical secondary's.
Air fuel: Innovate Wideband
Fuel Pump: Carter 4070 delivering 72gph
Fuel Pressure Reg: HolleyFuel Reg Psi: 3.5psi
Fuel: BP 98 Octane

I have the carb bolted on the car and it starts, idles and drives.

I am not too sure what the current specs of the carb is but its set to run very rich. i dont have any records of what was installed in the carb.

Its a fresh rebuild on the motor which needs to be run, we are currently doing this now (1000 kilometers of driving)

After the run in (1000 kilometers of driving ) we will put it the car on the dyno and tune it - However we want to get it close to perfect before we put it on the dyno, as dyno costs are about $150 per hour so we don't want to spend too much time tuning it and trying to figure out where we are


My question is:
Does anyone know what jets, power valve, accelerator pump, and any other specs that is a good base to start from on these Holley 600's? Or even better, does anyone know the exact specs for best performance?

Does anything else need to be done before i proceed further?

i realize that shipping and duties may be a thing, but literally you just try jets (from richest to a little lean and then back to the optimal), until its right.
