But if I ever were to park it for a while... What would you recommend doing with the gas? Leaving it really low? Or cyphoning it out and refiilling it?

Mine sits every winter (in this area, usually Dec -> March). I start it about once a month and let it run to operating temperature.
As for now having a daily driver, as long as you don't have the car sitting for a year, you shouldn't need to do anything out of the ordinary.
