Talking Water temps / coolant leak

Hi everyone, first up, thanks to all that helped with info/advice for the rebuild... feeling bloody good to have this car back on the road after 2 years with only minimal hassles during the road test.

my water temp gauge (aftermarket) is in need of repair so i was wondering... my fans come in after driving/idling then cut out again (normal fan operation)... as an estimation, this tells me i am not overheating correct?
don't want to risk anything during break in and am fixing the gauge ASAP, but thinking this is a good sign as an estimation.

100 MILES ON THE BUILD AND COUNTING
PS: ANY IDEA HOW MY BLITZ WATER TEMP GAUGE WORKS? GETTING NO READING? ODDS OF THE GAUGE NEEDLE GETTING STUCK?

Check your ground wires. Improperly grounded gauges will not work.

Fans should come on and of as the coolant heats up, and cools down.
