OK.

New Mazda Competition Radiator
New aluminum AST
all new coolant lines
new thermostat
new Defi water temp gauge

tooling around Cincy streets..... temp hit 218F while driving... did not get on it very hard...

is this normal?
anything else I can do to improve cooling or check out??

have you done the fan mod. Depending on ambient temps, it will go up in temps until the ecu starts turning on the fans on low or medium....

again, double check the fans.

Have not done the fan mod.....yet.

I just figured that 218F was too high even without it... especially with upgraded cooling system..

is 218F dangerous or within normal range??

Have you burped it? Sounds like trapped air to me. You are asking for trouble at 218. You may need to burp it a dozen times over a week to rid of all the air. I'm doing mine right now after a new radiator install.

Fans? maybe, but they are pretty dependable.

I'm really confused on how hot is too hot on the 7, it depends on your mixture of coolant to water mainly.

Otherwise, i dont' see why the low fans turn on at 210 and the high fans on at 220? What are your temps when cruising ont he highway? and again, what are ambient temps?
