Oil Catch Can... What's in there?

I Don't know exactly what's in these catch cans. Today I drained mine and all it went out of there is Watter. Pure Watter. It's not antifreez, fuel, nor oil, it's just watter. Like the one that comes out of exhaust in the morning on cold days.

Sometimes i see that white substance in there, which smells like fuel, but most of the time it's just this crap.

The engine has been rebuilded and ported 3k miles ago, as were the turbos. Injectors were cleaned, etc. Everything is fine, i have no problem, smoke etc. However this stuff is worrying me because 2 months ago, that watter that was inside catch can froze and the oil pan couldn't breathe so it started smoking.

I just need some input on this situation. I'm thinking about switching to synthetic so i don't get that white crap under the oil cap. I change my oil regularly every 2k or so.

Let me know what you guys think.
