I used to hear the sound every day in the summer. It totally went away when I installed the downpipe. I don't know what the air laws are in your area, but that precat could be the death of your car. Get rid of it if you can.

i wouldn't say its 'totally' normal. gurgling means either there is air in the cooling system which will decrease the cooling system's effectiveness or the coolant is boiling and you're overheated. downpipe or the almighty fan mod will do the trick.
if the search was working you could find a million threads on this.

Could it also be an indicator that the coolant needs to be replaced?

Exclamation

Just sounds like heat soak to me....

If so, it's ok, just make sure let the car cool down before jumping back in it again.

The manual says it's normal, but I think it's coming from the AST. I have a metal AST.

I also have an aluminum AST, downpipe, and have recently had the coolant flushed and replaced. I still occasionally get gurgling noises. BTW, you can also hear the air bubbles being released from the AST.
