I've heard that "numbers dwindling" thing for years though. There are people doing billet 3 and 4 rotor builds fairly regularly, and putting high end suspension on the car, and doing high-dollar restorative work. I'd argue the market has changed, and this particular slice of it hasn't.

There's lots of carbon stuff available, but either A. three different vendors make the same thing, instead of something else desireable, B., it's cheap crap, C., it's not cheap crap but you can't actually get it because the vendor is so small they can't produce at scale, D., they inexplicably spent time on a high-end replica of something nobody wants.
