As Rynberg suggested you need to get yourself an oil temp gauge.
As for your goal of 500 with a streetport later it's attainable just depends on what boost level you're going to run. My 500R hit 503 at 20psi with a rich tune. You'll definately want to run a second fuel pump, but otherwise we have similar fuel setups. All other aspects ignition, IC, exhaust, computer are different, so take my numbers in stride.

did u post the dyno sheet for the 503 rwhp run yet? i saw the one that was on lower boost and it looked like power dropped off significantly up top?

Other mods. RE V-mount, Crane Fireball Ignition, Microtech, Streetport, Midpipe, Apex GT-Spec.
I had the T3 35R before, then the T4, and with each upgrade I noticed a significant difference in power and how the car got up and moved, however, my spool has only changed about 300-400 rpm from the T3 to the 500R. Driving around on the street the car is a ton of fun. Plenty of low end power for stoplight to stoplight, but on the track the car is great to. Took it up to Gingerman a few weeks back and the response and power were great.
I'm unable to find the 503 dyno right now, but I will look on my other pc, as I'm unsure of which one it was on. If you have any other questions let me know.

for highway pulls i wouldnt think youd need to upgrade your oil cooler. though a nice used set of r1/2 dual oil coolers would be nice for peace of mind. but you should get an oil temp gauge anyways so you know what your temps are.
a little OT. when i went to japan with my friend we drove around c1 and wangan for a few hours watching the people race. it was awesome. saw a lot of spirt r's and gtr's. i got to drive a few different touge's also and his friends s15
