High Water Temps
I have a V-Mount setup and both before and after doing a full coolant system flush I am seeing water temps as high as 103C just going down the highway at normal speeds (70-105mph).
How High is too high ?
Everything in my engine bay looks good.. no leaks.. My Belt is solid... I'm even using water wetter. What else should I check?

It sounds like you have a custom v-mount setup, in which case, pics would probably be helpful. Did you replace your t-stat? Are your fans coming on correctly? The stock ecu doesn't even turn the fans on to LOW speed until 105C.

The fans are coming on at 86c. I'v had the v-mount setup for 3 years and usually never see above 93c even when I race. The only thing new this summer is a vented RE hood.
I have a full setup. PowerFC... Garrett 35/40. Everything important is Cool Chromed or Jet coated.
As for the T-stat.. I don't know.

I've been above 103C before when my alternator belt broke, and the engine was fine...however, I believe once you get past 110C+, it becomes more of a real problem. Regardless, I agree with the above, in that 103 is a bit much for cruising temps. What are your ambient air temps?

Well if you have the undertray removed, is there anything forcing the air to go thru both the rad and intercooler?
If you're simply relying on the dynamic pressure (momentum of the air hitting the car) to force air thru the radiator, it won't work. There needs to be ducting all around to 'catch' the air and give the air no choice but to go thru the core.
