Very do-able for under $400 including lines, fittings, and custom brackets.
Or just go for the stock R1 coolers. Your choice.

Look at how your single cooler is plumbed. The oil feed is from the fitting on the block. The return is at the oil filter pedestal. From that information you should be able to determine the direction of flow through your single cooler. When installing the R1 cooler, the unit itself is a mirror image of the driver side cooler but the fittings are the same. Since the R1 cooler receives the oil flow first, hook it up such that it receives the oil at the same fitting as the single cooler did. The outlet of the R1 should feed the inlet of the stocker, and then back to the oil pedestal.
Now, in theory it doesn't matter with the stock units since both sides have their own thermostats and operate in "bypass" mode until the oil heats up. Which is to say, that the oil can go in and go out of either fitting because it bypasses the cooling passages. I don't know if anyone's proven this though so you do so at your own risk
