Coolant temp rise time...

Got a question about how quickly the coolant temp rises under hard accelleration.
Here's my pattern: temp is 185F when I come to a stop, stand for a few seconds, and take off. Accellerate hard through the first three gears and then let off. By that time the temp gauge is showing about 215F. Doesn't that seem rather high?
Oil temps stay between 200-205, measured at the oil pan. Actually oil temps have never move out of the range 190-205, no matter what I did.
The coolant temp sender in plumbed into the throttle body coolant line btw.
Car's mostly stock. DP, CB, modified intake. Running just under 10 PSI. Ambient temp is about 75F. Got aluminum AST installed with a restrictor in the outlet to limit the coolant bypassing the radiator.
I ran the car in fourth at 85mph on the HWY and temp remained right around 185-190.
