A gasket is typically a flat paper or metal item that goes between two flat surfaces - it insures that whatever is passing between the two surfaces (oil, air, water, exhaust) doesn't leak out.

A seal is typically a rubber "donut" that seals a rotating component. For example, where the eccentric shaft comes out of the front of the motor - that's surrounded by a rubber seal to keep oil from leaking out around the rotating shaft.

Many times the terms are used interchangeably, however.
