Water temps and overflow issue

I have a Drummond built 13B in a standard Formula Mazda that I've owned/raced for the past 7 years. I have some changes going on with water temps and water overflow for no apparent reason. Not sure what's going on.

Question: Does water temp vary substantially from different locations along the water flow route? The car had the original temp sensor in the swirl pot and had been showing a gradually increasing average temp over the past couple of years to the point I've been seeing 200 - 210F on a 90F+ day. The last weekend we ran it was cool (75F) and I expected to see 190F, but the temp was pegged at 160F each session. And the thermostat is a 180F. One thing that's different now is I have a new AIM data system with the temp sensor installed in the back of the rear chamber. What temp should I be seeing in this new sensor location?

Also, I'm losing a lot of water, about 1/2 pint per session to the overflow bottle for no apparent reason. We changed the radiator cap and that made no difference. What's going on with that?

TIA.
