Water pump and rich/lean questions

Water pump and rich/lean questions
I need to take my water pump housing off to replace the gasket to the engine. Just wanted to ask what is the best way to take this off ? The water pump pulley hits the main ecc shaft pulley, so you can't just pull the waterpump housing straight off.. my friends says you can unscrew the water pump pulley and angle it off, then slide the water pump housing right off the studs... Just want to confirm this can be done?
Also, my car has been running rich lately after my rebuild... and I wasn't worried about it at all for the first month after the rebuild.. (rich = better than lean =) Now I want to tune it as good as I can get it.. But honestly don't know how haha..
How can I Tune it so it is just running slightly rich... I just want to make sure I am avoiding running lean, but want to burn as much fuel as I can =) Thanks guys..
