use the fuel pump diagnostic checker to look for leaks with the engine off
pressure test for boost/vacuum leaks if you can on a turbo car
rent a cooling system pressure tester and check for coolant leaks
crank the engine over with the oil filter out and make sure that oil comes out of the pedestal
those are all checks you can do beforehand if you want to.

Maybe there's something wrong with my oil pressure gauge (factory) but it doesn't read anything when the car is cranking. Only when it's actually running. I did the no oil filter thing to verify I was getting oil flowing before starting the motor.
Anyway, running a newly-built engine for a couple seconds with no oil pressure isn't going to hurt it. There's so much assembly lube in there you can start it and verify pressure builds with no problem.
As for fuel leaks, yeah, it makes sense to run the pump for a bit to verify everything is kosher.

Take oil filter off, crank engine, look for oil squirting out. : ) Then you know your oil is circulating. Make sure you DON'T have spark and fuel when you test this or your going to start the car!
