I see anywhere from 150 to 210 F oil temp depending on outside air temps and how hard I'm running the car. Water temps will be similar.

Theremostat temp is 84 degrees if you have the correct thermostat installed.

Replace the thermostat. Cutting the center out of it breaks the thermostat. It can't regulate engine temp and the bypass hole is no longer plugged. It's doing nothing for you but wasting fuel and fouling your plugs.

why would you take out the t-stat?

are you running all the shrouds (under tray/upper rad. shroud/rad shroud)?

oops

Yeah, even on a full race FC thermostat is usually a good thing to have, as for your temp anything over 190 steals power to heat, in the 200's you start getting into potential damage.
