It's going to be a long, long time before any parts become scarce.
You can still buy virtually anything (with a few exceptions) from any Mazda dealer. They key is to have the part number before you go, because a great number of dealers aren't willing to look it up and will just say it's not available.
If you have the part numbers, you can order any piece of trim and generally have it within a few days (in my experience).

I've caught redhanded Two dealers one in Columbus MS, and the other in Daytona Beach FL (the old dealer) both said discontinued, when I came back a week later with a part number they said "oh it'll be here in 3 days."

I've been able to find quite a few new interior parts, vents, idiot light-clock panel, door handles, ect., as well as exterior and mechanical and electric parts at Mazdatrix.com.

The Des Moines Mazda dealer has helped me figure out which parts I need, but they put me on hold almost every time I call no matter how quick my request/question is. I just hang up and call back, give them my number and say "call me", I'm sick of that crap.

Luckily my dealership has a really good parts guy. Or at least they used to, I think hes now in charge of the service department. He would look everything up for me, and would get me the parts next day for 4 bucks extra.
I haven't had any trouble finding any parts. Ever. And i've replaced a lot of parts. If you're willing to spend a few hours going to junkyards or looking on the "parts for sale" section you should be ok.

The chassis and body parts catalog is linked to in the FAQ. It contains the full parts list for the every piece on the car. If you wanted, you could order everything in the catalog and build an FC from scratch.
