oil temp too cold?

Hey guys,
My n/a has oil temps that float between 120 and 160, the highest Ive ever seen is 180.
The engine has the therm pellet mod and Im considering reversing it to help correct this. If i beat the car itll run around the 160 mark but when cruising its always about 130.
any thoughts?
thanks

That's directly after the oil comes from the cooler, so you're reading the lowest temps in the loop.
