Lots of guys break-in engines on a dyno. Just because its on a dyno, doesn't mean that you do a peak HP run right off the bat.

dyno break ins are a hell of a lot more controllable and consistent than street break in's. Basically, rather than having to worry about stop signs, traffic, speed limits, etc. you can just put the thing on the dyno and vary rpm and loads however you see fit. Like previously mentioned, during a dyno break-in, you aren't going to go WOT redlining crazy drivin!
