More cooling probs!!! Kinda long!

More cooling probs!!! Kinda long!
k... This whole started with overheating.
Discovered it wasn't the water seals, but rather it was the water pump gaskets.
Replaced the gaskets, put it all back together... and woohoo.. it runs great... stays at about 1/4 gauge... thought it was done.
Leave to get a car wash.. and give it a little gas pulling out of my driveway... it almost dies... no power at all... keeps wanting to die when I give it gas. Turn around park it... pop the hood.. and I have a leak in my heater hose on the driver side.
Replace the hose today... and now... it's starting to overheat again. After idling for about 10 minutes it was almost at 3/4 temp... so I shut her down.
The upper radiator hose was still cold.. so the thermostat didn't open. I just replaced it, and my rad cap.
Any suggestions. Oh yeah.. I don't have any coolant in the system right now.. just water.. but it was working fine. It started to get expensive adding coolant, draining it, adding coolant, draining it... etc...

is it a stock thermostat or some aftermarket one. Is the thermostat install correctly? with the jiggle pin pointing at the right place?
did the waterpump belt broke? clogged radiator?

It's a stock mazda thermostat. Installed correctly.
Waterpump belt was replaced in the process with the gaskets... it's fine. Checked radiator too while everything was apart... it's good also. Plus I have flushed the system of all coolant prolly 10 times so far.

Nevermind.. think I fixed it... barely gets to 1/4 temp now. But it sounds a little funny.
Is there a break in period on new belts? Smells like the belt is burning almost... and it's within FSM specs for tightness on both the Alternator and Air Pump belts.
