How many horses can a stock radiator and fan can handle. I really don't want to upgrade my radiator on the fact that I would like to keep the stock fan.

there are plenty of aftermarket rads out there that allow you to keep the stock fan AND shroud
i.e. Fluidyne
Koyo
I believe Griffin has a stock replacement too

but I've heard the stock rad is a pretty good unit...I went ahead and upgraded mine to a Koyo anyways (on a stock engine)

The fan is only used for low-speed driving and idling, so it doesn't matter how much peak power the engine makes.

Since people rate the car, from the hp at the flywheel and to the wheels differently.
