It is pretty well a "personal preference thing"
I tried numerous spots on the car to put gauges, from the Stereo location to glove box lid, driver's A pillar,Idiot light cluster on top of dash,In the vents on a S5,Logicon Location..etc,etc.
You just need to figure out what you want, and how visible you want them.
As far as Gauges are concerned, again you can get digital or meter/sweep gauges..and Mechanical or electrical.
I personally prefer electrical so no fluid have to go to the gauge.
Location of senders/sensors will vary and can be put in a variety of locations too depending on what you intend on monitoring. You can find a bunch of info on that easily.
Ie: water temp sensor can be put in a rad hose/adapter piece..or back of waterpump..or old stock location..or Hose to throttle body..
