Fuel pressure release

Allrighty then... I'm going to rebuild the enigin in my 'vert this winter, I started ripping things out today. wow the engine bay looks big now... anyway, How would I go about releasing the pressure from the fuel system? (aside from pulling the hose and letting it spray across my garage ).
According to the manual (and my common sense) You pull the plug on the fuel pump while the car is running. BUT my engine is siezed, so thats not possible.
Any input is appreciated!

After sitting for quite a while, the pressure subsides somewhat in the fuel system. When I've pulled the fuel line off the filter to change it after the cars been sitting for a period of time, not much pressure.

Wherever you disconnect the fuel hose, wrap a rag around it before pulling it off - let it blast out into the rag instead of your face.
