Fluctuation in running temp on s4 na, members help please

Temp will run up to 190+ after a few mins of driving after warming up(never over 195, i have 195 tstat). It will drop back down after a few mins but is this normal ? I just put back on the bottom engine tray also but that prolly helps more on the highway than on slow speeds.

The problem i believe is my sensor mounted on my tstat neck, I have a s4 na and i have an aftermarket watertemp gauge the sending unit mounted in my tstat neck...where the sensor for the gauge mounts into the tstat neck has started to leak but nothing significant (like leaking at all really much but i can tell it may get worse), i can see some green (coolant) around where its threaded in so im assuming its started to get a leak and isnt completely sealed, could this cause air to get in my coolant or make me run hotter?

For you all to know, i have bled the system and filled it properly and all my hoses are good and no cracks/leaks (with the exception of what i mentioned), also the tstat is brand new (3000+ miles on mazda 195 tstat), and all new rad cap and tstat cap as well. My heater core has been bypassed and there are no hoses going to it (bypassed), and theres nothing else i can think of.

The car runs well and after temp goes back down it stays pretty much stabile, sometimes coming to a stop or driving slow it will even run lower than 175 , but for the most part its usually around 178-182 during 65+ mph and under that it tends to run cooler around 175.

Ive run it hard and its never overheated on me, Ive run it hard when it was at 190 to see how it would react and the temp never goes up really and never overheats...so i am pretty sure everything is fine...also no coolant in oil, no oil in coolant and no smoke on startup ( failed coolant seals) , engine is only 4000+ miles on breakin.

Also the water temp gauge for the stock gauge never goes past 1/8 - 1/4 up or whatever, even when at 190 the temp for stock gauge doesnt really ever budge.

if it's not going past whatever temp the thermostat is designed for (195 in this case) then you're fine i'd say
