First oil change after rebuild?
I recently and personally re-sealed my motor and installed new Mazda 2 piece 2mm apex seals, and pressed in two new rotor bearings. It's got about 500 miles on it now. Thinking about changing the oil already. At what miles did you others with a fresh rebuild do you first oil change? I'm thinking it's a good idea early on to drain all of the potential impurities in the oil from building the motor, and the initial breaking in. What do you all think, just wait until 3k?

I usually change it about 500 miles after a rebuild, the follow the normal oil change schedule according to the manual/FSM after that.
You will need more frequent changes if you are also tuning a standalone at the same time since the oil will become polluted with fuel.
