Oil - Castrol GTX. Since its cold up there, probably use 10-30, I think its 4.5 quarts or so. Hopefully aaron will post what he uses - he live in the same city. I forget what brake fluid it uses stock. And use the standard green stuff for coolant. Not sure on the volume of coolant either.
Oil-- any 5w30 since winter is coming, change out every 3k or 3mo and match weight to weather
Brake fluid--any DOT4 and bleed yearly.
Antifreeze--any non recycled regular antifreeze, I like Prestone and store brands. Change it out yearly. And, buy it premixed or use distilled water to mix your own.
Power steering--any PSF or DexronIII or better ATF. Flush it yearly or siphon refill reservoir at every oil change.
Transmission--automatic any DexronIII or better, manual any GL4 or GL5 75w90. Either should be changed at 30k intervals.
Rearend--any 90wt GL5. Change every 30k.
Clutch--same as brake fluid. Bleed yearly.
Read your owners manual. If you don't have one, find one on ebay or at a salvage yard. The factory service manual can also be dowloaded.
The search engine here works pretty good too.

All this information is in the manuals. Please read the FAQ and download the Factory Service Manual as it contains all the information you need to service the car.
A Haynes manual will contain all the fluid info as well. If you're going to get a Haynes manual anyway, just refer to that. It'll also tell you what oil weight to use.
+1 Castrol GTX
+1 what deadRX7 said on antifreeze. Also, bottle should say "safe for aluminum."
