Car Won't Idle and Runs Rough When I Give Gas
I should start off by saying I did an emissions delete as well as a rats nest delete, I made sure when finishing it off I plugged everything that needed to be and replace all the old vacuum lines with new ones. I did damage the IAT Sensor on accident, but when I start the car if I don't immediately give it gas it will die. When I do get it running it will run very rough with the occasional afterburn. I made sure to clean my BAC and the AFM is plugged in.

check for vacuum leaks.
check your timing if you messed with the CAS.
Well, yeah, your car isn't going to run well if you break your IAT sensor...
If the sensor is bad, the car is going to make an assumption about the air temperature that will cause your fuel mixture to be less than idea.
Assuming it's a fail safe and not fail deadly design, probably too rich. I don't actually know which way it goes.
I broke and replaced mine back in the day. Or maybe I replaced it because it was about to break. It's an FC design flaw.
You should still check for vacuum leaks. Clamp a plastic bag over your MAF and apply air pressure to an unused nipple in the manifold.
