Bye Bye choke system
It's not a "choke system", but many people have done the "throttle body mod". I did it on my old car (S4 n/a), result for me was crappy idle, and some very slight increase in throttle response, slight enough that it may have been my imagination.

I have done the throttle plate removal in all my cars and have been very pleased with it. On my old GXL, I really went nuts and profiled EVERYTHING in the TB. There was a very noticeable difference in both power and response. On my current base model I just yanked out the throttle shaft and butterflies, then did some basic smoothing. It seems nearly the same improvement.
I left the thermowax assembly connected, so no cold idle issues.
I removed the throttle damper as well. Quicker throttle closing means faster upshifts. The downside is that now I get a little pop when I snap the throttle shut.

On a properly working NA, removal of the tertiary throttle plates will have no effect. They are held open via a spring, and closed via engine vacuum only when cold.
On a TII, because the tertiary throttle plates are vacuum delayed, removal does help with more crisp throttle response but can also cause a stumble when going from low throttle to high throttle. No power increase in either case.
