Ideally, the belt needs to be secure to a point (or points) that are directly lateral from the point they exit the seat.
Roll cage cross bars specifically for this purpose are positioned about shoulder height behind the seat.
Are you mounting them to the floor???
This is a big no-no.

so these nice, wide, tight fitting belts will slip off in a side impact but my skinny little stock belt on one shoulder will hold me just fine? They are SFI rated, they can handle the G's.

I have heard that some "M" rated helmets are just "SA" rated helmets without a Nomex liner. I think if you where racing or autocrossing, a "M" rated helmet would still fail tech inspection if the rules state a "SA" helmet is required with a rollbar or cage.

People were talking about the lower belts riding up and causing injuries to your gut area. If you were to buy seats that had 4 slots for belts IE two for teh shoulder straps and 2 lower slots for the lap belts would that negate the lap belts riding up?

ive never seen seats with slots for the lower belts. you just need to make sure that you have the lower belts mounted at the right angle to keep them from moving, usually like a 50* angle. they ride up because when you tightedn the shoulder belts it pulls that lap belts up, you should have the lap belt tighter than the shoulders anyway so they wont move.

i just went to pepboys todat and i saw a racing seats with the slots for the lap belts and a hole for the crauch strap each seat was 90 bucks with a universal slider included
