1987 RX-7 GXL rebuild

I am having my 1987 RX-7 GXL rebuilt because I love the car so much. I am a busy dentist and I am no mechanic so I am paying for the job to be done by a place here in Fort Worth that does nothing but Rotary work.

I know this can become a large list but what are some of the top things I should be looking for to be done by this place in the engine rebuild? Is there anything I should definitely ask for or ask about? I want more horsepower from the car. It has a high performance exhaust and a high performance electronic ignition which made a difference when it was put in 7 years ago. What else could be done with the stock engine or intake and exhaust to increase performance?

I know this is a loaded question but I want to do what is right from the get go and don't want to miss anything.
