What kind of gasket material to use?

Ok, so Im about to pull off the acv and make some blockoff plates, but I remember last time I did it I wasnt sure about what to use so I just used some high temperature sealant or some junk..
This time I went to get gasket material and I found a bunch of different kinds, but they were all rubber, or cork. Will this kind of gasket do, or do I want something more like an exhaust gasket that will stand up to more heat.

What do you guys use?

I use the dark gray sheet gasket. No sealant. I spray Disc Brake Quiet on the blockof plate to hold the gasket in place. Same for the intake manis.
