It's been done, not really recommended.
Easier to just get an FC convertible, or a Miata if you don't want to drive a tank. A 1.6l Miata feels almost exactly like a Series 1 RX-7 to drive.

There were a few (very well-engineered) convertible conversions done in 1981 or so by a California company (you could order these cars from the dealer if I remember correctly). The car was called the Pacific Avatar RX7.
Pacific Avatar did not stop at simply chopping off the roof either. These cars were also powered by a turbo'd 12A producing somewhere north of 160hp (vs. 101hp for the stock 12A at the time) and went zero-to-sixty in around 7 seconds--- not overly quick by today's standards but faster than most cars built back then, including the Corvette and Porsche 928 of the same era.
Of course, the price for one of these in 1981 hovered around 40K--- four times as much a a stock 7 sold for. By comparison, a Ferrari 308GTS of the same vintage was around 45K.
Needless to say, not many Pacific Avatars were sold. But if you could find one now...
