I removed the parts of that big harness that were needed to run the t2 engine, such as the plugs for the coils, fuel pump relay, main relay, circuit opening relay and made a harness just for those items. Much of that big harness you have isn't needed for an FB. To run the gauges I took the FB's stock engine harness, removed all the carb related stuff, and just hooked it up to the various things needed to run the gauges. Hope that helps

Actually I'm in the final stages of all the wiring, and haven't actually run it yet, but many others have used the t2 coils and other electronics and it works out just fine. I'll be sure to post an update when I go to fire this thing up next week...

Started the car a few days ago, having some idle and hard starting issues, but all of the wiring I had to do in order to use the stock ECU has worked beautifully! I'm not sure how much information you actually need, but basically you use the entire engine harness from the S5 engine (no modifications needed) and you will need pieces of the enginebay/dash harness from the S5 (its a huge harness) Basically you need the connectors for the coils, main relay, fuel pump resistor, and ciruit opening relay. As well as the yellow connector that connects that harness to the ECU. Then you just need to follow the wiring diagrams and make sure you attach everything correctly. The only place you need to tie into the FB harness is in order to get switched power (only on when the key is on) to tell the various relays that the car is on.
To use the FB gauges I modified a 12a's engine harness to hook up the various sensors, like water temp, oil pressure, low oil etc etc. I also used the FB starter/trans harness (to tell the starter to go on and to hook up to reverse lights)
Any other questions fire away, most of this is fresh in my head
