proper way to let a car sit for a while ?

i am having problems with my 85 , beings it isnt my daily driver and i am not around to let it run for a little while every day and drive it once in a while , what can i do to prevent carbon lock ? i am sure that this has been discussed and i read the article on how to fix the problem of carbon lock . but i dont think i fully grasped the consept of how to make it not happen in the first place .
any help would be greatly apriciated . i am restoring the car that is why it sits all the time .
