Help Removing AC components and wiring harness

I removed my engine and transmission in preparation for painting my FB and I am struggling with the last few components in the engine bay.

How do I remove the wiring harnesses in a GSL-SE? If I climb under the dash, there doesn't appear to be a set of connectors immediately behind the firewall. The diagrams I've found make it look like a solid harness that weaves into the dash, at least on the driver's side. Is it possible to remove for painting or should I just wrap it in a trash bag and paint around it? Passenger side harness seems like a pain too.

I'm also needing to remove my AC components but I'm not sure how to store the parts and block off the AC ports at the firewall so that I don't get moisture in the parts. It's possible that these could sit for a while. Any advice? Anyone know what type of plugs I need and where I could get them?
