Carburetor dialect

I'm in the process of snatching up parts for my weber down draft. I've got the basic understanding of what idel, main, and air jets do. As well as emulsion tubes, but while checking out parts for the rebuild I got kinda stumped as to what the fuction of these two were.

Needle and seat
and
Pump bleeds

I can use my imagination and kinda have an idea, but my imagination rarely coincides with reality.

So if anyone has an indepth description, hell one at all of, how changing these two parts will affect my carb it would be kick ***.

As an after thought, I was talk of progression holes, are these fixed? For a moment I thought it was related to the emulsion tube? No idea.
