Is there any info on how to remove a rear differential from a GSLSE? I need the best possible and easiest way.

Very Easy,

Remove the drive shaft.

Remove the e-brake cable, Caliper, Fluid line, Bracket and rotor, Use BFH to knock the axle out. Repet for the other side.

pull all the bolts holding the Diff, Pull it out. fluid will run out of the bolt holes.
