Hey,
welcome to the forum. Good to see some poeple trading in some 5.0 to rotary's (AKA the dark side as some people would say). First thing to look for I guess would be rust. Look in the rear wheels most common. Its usually easier to see if you pull the storage bins behind the seats (You just need a cross screw driver for that). Beside that see how easy it is to fire it up (Very quick, and rough compression test kinda).

How stock is the engine, I ask as the rear has been swapped, beware if you are in a emmissions checking area, make sure you can get it passed, has the "rats nest" been removed (search button) What carb and exhaust is on it.
Most problem areas on these cars are easy fixes, other than rust.
Check the crossmember etc for signs of bottoming out, gauges work, clutch pedal feel and engagement, smoke on start up-high rpm, signs of maintenance (plugs, oil changes, tires)

Lives on the Forum
The engine itself will be very reliable, mine has 206,000 on it and I race it most weekends. Everything else is easily handled (carb, ignition, wiring). If you are lucky, your gas mileage might be comparable to the 5.0... Welcome to the forum.

don't worry about identifying the rats nest, it lives up to its name and is a huge tangle of tubes right on top of the block, so you shouldn't miss it, especially since it sounds like you have experiance with cars.
I would say look at the frame rails under the car. Those can get rusted and are obviously a pretty important part of the car.
And also know that the GSL-SE had a different bolt pattern than the S, GS, GSl, so unless the guy also did the front suspension you are going to have to worry about wheel choices. (if your looking into those of course). The GSL-SE had the common 114.3 bolt pattern and the other models all had the less common 4x110.
Welcome.

The T-2 or TII upgrade is short for Turbo II which is a motor out of the later model FC Rx-7, more power, displacement, fuel injection, and a turbo, people like the swap you could say.
