You'd be using an early front cover and water pump anyway, and making your own oil pan anyway, right?
So then, just fabricate an intake manifold to mount three Webers (I see plenty of 3-carb setups for use on 240/260/280Z engines, buy that and then re-auction the intake manifold) and then make your own header from two RB "Do it Yourself" header kits if you're lazy and don't feel like doing a ton of tubing bending and cutting and flange cutting. You'll be doing enough of that making the intake manifold.
Jetting the carbs should be easy - if you use 40DCOEs then you can borrow the base jetting setup from the dual DCOE setup for 13Bs - each carb is still seeing the same rotor size and airflow requirement. That just leaves the problem of the distributor. RB sells a three rotor dizzy kit but it's VERY expensive. We're cheapskates, remember? We can find a better way. I noticed that the RX-7 distributor looks a LOT like many of the 4-boinger dizzies. Very similar dizzy heads and internals, except of course the two pickups and vacuum advance cans. I wouldn't be surprised if there were some Mazda V6s that also used the same dizzy head except for the all important (for our purposes) SIX-lobed reluctor wheel. The dizzy is trivial to disassemble, and the reluctor wheel/top shaft assembly is easily removed. Once that little hurdle is cleared we still need a special dizzy cap. We can either buy it from RB (they sell them separately!) or we can copy their setup which is shown in winderful detail in their catalog! Their cap looks like it was made from $3 in parts from the local hardwae store, there's no reason why a decent Backyard Engineer can't do the same thing!
OK, someone near me has to buy this thing because I want to get started

I wouldnt want to buy anything like that off Ebay, would have no idea if it has compression or not. Only reason I bought a Jspec motor, was Dave Gibson (fc3s.org) offered a 30 day warranty. Gave me plenty of time to compression test it, and it has almost 120 psi on all 3 sides of both rotors. So I was happy
