Any gsl-se will be suitable as its already set up for a 13b with efi. A 1985 in good condition will be great as a starting point.
Dropping the REW in will be relatively simple as the work going from a 12a engine will not be needed. No major body work will be needed.
Simple do a search on the forum for detailed instructions, in particular look atthe sticky at the start of this forum. If all goes well and you do not incorporate major modifications, two weekends with friends should see you on the road.

The REW is quite different from the engine you would be replacing. If you can fabricate stuff real easy, then it won't be that hard. If you're not a pro fabricator or you don't want to spend a nice sum of money, then I would suggest abandoning the idea.
79 base was the lightest from the factory I think, but I'd go with an 84-85 S model (no sunroof) because it comes with a few better parts.
What's wrong with your 3rd gen?

The real advantage of the gsl-se is the rear axle and brakes, and there is relatively little work changing over from the 13b to the 13b-rew engine.
I would suggest a 20 hour timeline would be feasible for experienced mechanics plus the usual beer breaks.

thast too ******* funny, lol.
man, i am going to slap you. then i'm going to give you a first gen body and take your fd. then when you possibly have the swap done and "maybe" beat the fd in a straight line. i'll run circles around you and love the fact that i don't have to worry about aging gremlins, have nice interior, etc. maybe i'm the only one in the boat here but i think some of your marbles fell out. have ou ever driven a 1st gen to even see how they feel? its a whole different animal then your fd.
