What is the ideal engine temp when driving?

What is the ideal engine temp when driving?

My 1983 RX7 usually sits around 210F when driving on the highway and i was wondering if that's a bit high or if that's standard temps

210F is high, especially on the highway where there is max airflow.

Where are you measuring it? This makes a big difference, coolant temperature shows an amazing difference at different locations on the engine.

210 at the water pump housing - ok, a little hot but not scary. 210 at the stock coolant sender location (hottest part of the engine) - it's fine.

Also, what Thermostat are you running? Does it have the jiggle-pin at the 12-O'clock position? It matters,
